Why water is the most accurate cooking medium
Every other method on this site has a variable you can’t see. An air fryer’s actual air temperature differs by model. An egg cooker depends on evaporation rate. An oven swings 25°F either side of its setpoint as the element cycles.
Boiling water has none of that. Once water reaches its boiling point it stops getting hotter — extra heat converts water to steam rather than raising the temperature. Turn the burner to maximum and the water is still 212°F; it just boils away faster. That physical ceiling is what makes a stovetop time repeatable in a way no appliance can match, and it’s why this is the reference method for the entire timing chart.
Two things do move that ceiling. Altitude lowers it — around 202°F in Denver — which is why every time runs short up high; see boiling eggs at altitude. And a simmer isn’t a boil: water at 190°F looks close enough and cooks measurably slower. Big constant bubbles or wait longer.
What your equipment changes
The pot
Wider is better. Eggs in a single layer under an inch of water heat evenly; eggs stacked two deep don’t. A wider pot also holds more thermal mass, so it recovers its boil faster when cold eggs go in — which matters when you’re cooking a dozen.
The burner
Once you’re at a rolling boil, burner power stops affecting temperature and only affects how violently the water moves. Turn it down to the lowest setting that maintains a genuine boil: you get the same 212°F with less water evaporating and fewer eggs knocking together and cracking.
The lid
Off, once the eggs are in. A lid drives the water to a harder boil and hides what it’s doing, and neither helps. Use it while bringing the water up, then take it off.
Cold water start vs boiling water start
Both work. They’re different tools:

The rule people get backwards: a cold-water start needs less time from the boil, not more, because the egg has already been heating on the way up. Salt, vinegar, and baking soda
The three most common pot additives, honestly assessed:
Salt doesn’t meaningfully change cook time — you’d need far more than anyone adds to shift the boiling point. It does make a leaking egg coagulate faster if a shell cracks, which limits the mess. Mildly useful.
Vinegar works the same way, more aggressively. Also mildly useful, and it can leave a faint smell.
Baking soda raises the water’s pH, which theoretically weakens the bond between white and shell membrane. The effect is real but small — much smaller than egg age or a proper ice bath. Fix those first; see the peeling guide.

When to use something else
The stovetop wins on precision and batch size. Reach for another method when peeling is your recurring problem (steamed or Instant Pot), when you don’t want to watch a pot (air fryer or egg cooker), or when you live high enough that a pressure cooker’s altitude immunity is worth having. Does turning up the heat cook eggs faster?
No. Once water is boiling it stays at 212°F / 100°C regardless of burner setting — the extra heat converts water into steam instead of raising the temperature. A higher setting just evaporates water faster and knocks the eggs around more, which cracks shells.
Should the lid be on or off when boiling eggs?
On while you bring the water up to a boil, off once the eggs go in. A lid pushes the water to a more violent boil and hides what it’s doing, and neither helps. Every time on this site assumes lid off at a steady rolling boil.
Does adding salt to the water change the cooking time?
Not meaningfully — you’d need far more salt than any recipe calls for to move the boiling point. It does help a leaking egg seal itself if a shell cracks, which keeps the pot cleaner, but it won’t change the timing or make eggs easier to peel.
Is a simmer the same as a boil for eggs?
No, and it’s one of the most common reasons eggs come out underdone. A simmer runs around 190°F versus 212°F for a rolling boil, which cooks noticeably slower than any chart assumes. Wait for large, constant bubbles before starting the timer.
Why do my eggs crack when they hit the water?
Temperature shock or impact. Lower them in one at a time on a spoon rather than dropping them, and keep the boil steady rather than violent. If it keeps happening, a cold-water start where the eggs heat with the water is gentler on shells.
