An egg cooker doesn’t run on time — it runs on water. You pour a measured amount into the base, and the machine buzzes when that water has boiled away. More water means longer steaming, which means harder eggs. The measuring cup’s markings are the doneness control.
The one thing nobody explains
This is why egg cookers frustrate people. You look for a soft-or-hard dial, don’t find one, and assume the machine is basic. It isn’t — the control is just somewhere unexpected.
Underneath the egg tray is a shallow heating plate. Water poured onto it turns to steam, the steam cooks the eggs, and when the last of the water evaporates the plate temperature spikes and a thermostat trips the buzzer. So the amount of water you pour is the cook time. The little measuring cup that came with the machine has lines on it — usually marked soft, medium, and hard, sometimes just numbered — and those lines are the entire user interface.
If you lost the cup, you’ve lost the control panel. Most manufacturers sell replacements, and it’s worth getting one rather than guessing — or, if the machine is old enough that spares have dried up, it’s a reasonable moment to look at a newer egg cooker.
How to use it
1. Pierce the wide end of each egg
Use the pin built into the base of the measuring cup. This vents the air pocket so the shell doesn’t crack as the air inside expands — steam-cooking builds pressure inside the egg faster than boiling does. Pierce the wide end, where the pocket sits, and only just break the shell.
2. Fill to the right line
Soft, medium, or hard, according to the cup’s markings. Fill it accurately — a few millilitres is worth a minute or so of steaming.
3. Pour the water onto the plate, not over the eggs
The water goes into the base, underneath the tray. Then seat the eggs pierced-end up, put the lid on, and switch it on.
4. Ice bath the moment it buzzes
The buzzer means the water is gone, but the plate is still hot and the eggs are still cooking. Lift them out promptly and into ice water for five minutes — this is where most “my egg cooker overcooks everything” complaints actually come from. It’s the same carryover problem as with a pot, just with an alarm that tempts you to wander off.
Calibrating yours — one batch, then never again
Machines vary, and the factory markings assume large eggs at room temperature. If your first batch isn’t right, adjust the water rather than the eggs:
- Too soft? Add water next time — roughly 10% more for a noticeable step firmer.
- Too hard? Use less. Even a small reduction moves it.
- Uneven across the tray? The plate has hot spots. Rotate the tray halfway if your model allows, or accept that one position runs firmer and put the egg you care least about there.
Once you know your number, write it on a piece of tape stuck to the machine. That’s the whole calibration, and it holds indefinitely.
What egg cookers are actually good at
They’re consistent, hands-off, and they poach and steam as well as they hard-boil — most come with a poaching tray and an omelette dish. Because they steam rather than boil, the shells usually peel more easily than pot-boiled eggs, for the same reason the steamed method does well.
A tray of hard boiled eggs is also the classic meal-prep move, and they’ll keep about a week in the fridge in the shell.
What they’re less good at: precision at the soft end. A two-minute doneness window controlled by evaporation rate is inherently less exact than a countdown against boiling water. If you want a reliably runny yolk, the stovetop soft boiled method and a timer will beat an egg cooker every time. For a batch of hard boiled eggs while you do something else, the cooker wins.
Common problems
Eggs cracking every time. You’re not piercing them, or you’re piercing the narrow end. The air pocket is at the wide end; that’s where it needs to vent.
Machine buzzes almost immediately. Not enough water, or the plate has a mineral crust insulating it. Descale it — a cycle with equal parts white vinegar and water, then a plain water cycle to rinse.
White stuck to the shell. Very fresh eggs, same as any method. Older eggs peel better; the peeling guide explains the chemistry.
Shells cracking despite piercing. Usually the eggs went in ice-cold onto an already-hot plate. Let them sit out for ten minutes first, and see preventing cracked eggs for the rest.
Everything comes out hard boiled. Almost always the missing ice bath, not the machine. See step 4.

How much water do you put in an egg cooker?
Whatever the included measuring cup’s line says for your target doneness — the water quantity is the doneness control, not a timer. More water steams the eggs longer and makes them firmer. If you’ve lost the cup, order a replacement from the manufacturer; guessing at the volume is guessing at the cook time.
How long does an egg cooker take?
Typically 6 to 12 minutes for a full tray, depending on how much water you added and how many eggs are in it. The machine decides — it buzzes when the water has evaporated — so there’s no time to set. Doneness is controlled by water, not minutes.
Do you have to pierce eggs before using an egg cooker?
Yes. Steam-cooking makes the air pocket inside the shell expand faster than boiling does, and an unpierced shell often cracks. Use the pin on the base of the measuring cup and pierce the wide end, where the air pocket sits.
Why does my egg cooker overcook the eggs?
Usually because the eggs stay in the machine after it buzzes. The plate is still hot and the eggs carry on cooking in their own heat. Lift them out immediately and into ice water. If they’re still too firm, use slightly less water next time.
Are egg cookers better than boiling?
