Why the yolk has to be fully set
Deviled egg filling is a purée that has to hold a piped shape at room temperature for the length of a party. A hard, dry, crumbly yolk gives you exactly that: it mashes to a stiff paste and the mayonnaise thins it to precisely where you want it.
An underdone yolk is already soft and slightly wet, so by the time you’ve added enough mayonnaise to make it smooth, it’s too loose to pipe. It’ll taste fine and look sloppy. Eleven minutes, then ice — the hard boiled guide has the full method.
The recipe
Ingredients — makes 12 halves
- 6 large eggs
- 45 ml (3 tbsp) mayonnaise
- 1 tsp Dijon mustard
- 1 tsp white wine vinegar or pickle brine
- Salt and white pepper
- Smoked or sweet paprika, to finish
- Chives, finely sliced (optional)
Method
- Boil 11 minutes, ice bath 5. Fridge-cold large eggs into already-boiling water.
- Peel carefully. Appearance matters here in a way it doesn’t for egg salad — a torn white can’t be hidden. Peel from the wide end under cool running water.
- Halve lengthways with a wet knife. Wipe and re-wet the blade between eggs. A dry blade drags and tears.
- Pop the yolks into a bowl and set the whites aside on the platter you’ll serve from.
- Make the filling. Mash the yolks thoroughly first — before any liquid goes in — then work in the mayonnaise, Dijon and vinegar. For a very smooth filling, push the yolks through a fine sieve.
- Season and taste. Salt, white pepper. It should be a shade more assertive than seems right; the bland white mutes it.
- Pipe or spoon in. A piping bag with a star tip looks best; a zip bag with a corner snipped off does the same job. Dust with paprika, add chives, serve.
Variations
The base is a canvas. Common directions: crumbled bacon and chives; sriracha or chipotle for heat; horseradish and dill; curry powder and a little mango chutney; capers, anchovy and lemon for something sharper. Whatever you add, keep the filling stiff enough to hold a shape.

Best assembled the day you serve, but the components hold well:
- Boil the eggs up to a week ahead and keep them unpeeled in the shell, refrigerated.
- Make the filling up to 2 days ahead and refrigerate it in a sealed container or already in the piping bag.
- Assemble a few hours before serving. Filled eggs left overnight go weepy and the whites toughen.
Assembled deviled eggs keep about 2 days refrigerated, loosely covered. And they’re subject to the two-hour room-temperature rule like any cooked egg dish — at a party, that clock starts when the platter goes out. Troubleshooting
Filling is too loose to pipe. Yolks weren’t fully set, or too much mayonnaise. Firm it with a little more mashed yolk from a spare egg, or chill it for twenty minutes.
Whites tore while peeling. Very fresh eggs. This is the recipe where it shows most, so use eggs at least a week old, or cook them in an Instant Pot or steamer, both of which peel more cleanly.
Yolks are off-centre. Cosmetic, and fixable in advance: store the eggs on their side for a day before boiling, and the yolk settles centrally.
Grey-green ring. Overcooked or cooled too slowly. It’s visible in a deviled egg filling as a dull tinge — why it happens.
